Malt smell/flavor

There have been a lot of threads about getting a malt taste in beer. Inevitably it is pointed out that there are lots of malt tastes. So here is a specific taste/smell I am after:

It's in a lot of doppelbocks. There is a hint of it in Stone Arrogant Bastard. There is a lot of it in Smaltz Hebrew Genesis, if anyone knows that beer.

Even though Sam's Octoberfest is described as "A malt-lover's dream" I don't get quite the same thing from this beer.

What am I picking up on? Munich malt? Or is it a specific kind of Munich malt (I know there are variations)? Or something else? Thanks!
 
Oh, really? For whatever reason I thought what I was picking up on was a base malt. That would make sense though. It is a really strong, distinct taste.
