I have a Kolsch in primary. Fermenting around 62 degrees. It will be ready to rack to secondary in about 10 days.

I am getting sent to Israel in a couple days(for two months), so a brewing friend has agreed to rack it to secondary for me.

I had intended to put 4 oz of orange zest into secondary and let it sit for two weeks, then rack to tertiary for a month at lager temps.

What would the effects of leaving it in seconday with the orange peel for 6 weeks be? Or...should I have him rack it to secondary, put the peel in on my return and continue the schedule.

comments?

I'd stick it in secondary with the orange peel and let it sit. There's only so much citrus oil in the zest and after a couple weeks they're really not going to add any more. Most of the remaining yeasties will drop out and cover the peels, too.
