Looking for a recommendation for a brewing science book

I have read the general Papazian homebrew books etc. but I was thinking about buying a text that would go more in depth into the brewing chemistry. I was a chemistry major in college and although organic chem was not my favorite I think I can still comprehend the science.

Does anyone have any recommendations?

I've found that Brewing (2n ed.) by Michael K. Lewis and Tom W. Young is pretty good. It doesn't focus solely on chemistry, but a host of brewing processes, mostly in terms of commercial production. I haven't personally read Fix, but I hear great things about that book, as well.
