Looking for a recommendation for a brewing science book

I have read the general Papazian homebrew books etc. but I was thinking about buying a text that would go more in depth into the brewing chemistry. I was a chemistry major in college and although organic chem was not my favorite I think I can still comprehend the science.

Does anyone have any recommendations?

Agreed. Fix, Principles if Brewing Science is a great book.

I've found that Brewing (2n ed.) by Michael K. Lewis and Tom W. Young is pretty good. It doesn't focus solely on chemistry, but a host of brewing processes, mostly in terms of commercial production. I haven't personally read Fix, but I hear great things about that book, as well.

I recommend this book as well - it doesn't have as much for chemistry, but I learned a ton and fine-tuned my brewing techniques with this -
