low OG weizen woes

I just brewed a weizen kit from windriver brewing company that came out to 1.027 OG. I am kicking myself for not taking OG reading in kettle.before adding water.

Does anyone have any suggestions for somehow fortifying a bit post-fermentation? Thanks.
 
If you are extract brewing from a kit and doing a partial boil/top-off, you don't have to take an OG. As long as you use all the ingredients in your kit, and add water to the correct volume, you will be close to the target OG. The math/measuring ingredients/etc.. has already been done for you.

On top of this, you can end up with weird OG readings with partial boils as sometimes the water and wort do not mix perfectly together.
