I make a Pale with 80%. Turns out real nice. A little more depth than pale malt, but not as toasty as Munich.

I have a recipe that is 80% vienna 20% pils, and its the best beer I make. Some people don't consider vienna and munich as base malts, I am not one of those people!

Any recipes folks? I would love to see them. I am a huge vienna fan. I used it in my wheat beer (5 lbs wheat malt, 2 lbs 2row, 2lbs vienna, hefe iv yeast) and it is fab!

Yooper posted this in the database, I had the original recipe and she made a change or 2 to fit what she had on hand. I think mine was the best beer I have ever made, and yooper enjoyed hers as well. Fizzy Yellow Beer There is a link to the original in that database posting as well!

my recipe was,

10 Gallon

22.5 lb vienna
1 lb munich
.5 lb melanoidin

2 oz styrian golding 4% AA @ 60 min
2 oz saaz 3.5% AA @ 10 min

4 pks saflager s-23

O.G 1.052

One of my best recipes has 53% vienna, 27% munich. It's a great all late-hopped amber. The big malty flavors go amazingly with the huge hop flavor.

I have a nice slightly hoppy vienna lager. It's one of my regular brews, very nice on a hot summer day watching some baseball.

9 lbs Vienna Malt

1.00 oz Tradition [6.20 %] (60 min) Hops 18.6 IBU

I have brewed an APA several times - 85% Vienna - 15% CaraRed. Hop it with Nugget and Cascade or Amarillo - or all Amarillo - or your favorite hop combination. A good change of pace from 2-row base malt.

My last two brews have used Vienna as the base, Vienna SMaSH with Simcoe, and an attempt at a red ale with 8 3/4lbs Vienna,1/2lb Crystal 40,1/2lb Wheat,3/4oz Black Patent. Can't say that it will really be red, but I have to wait and see the finished product in a glass. It's still in primary. These are my first go around with Vienna, but I've heard nothing but good things about it.

Dead Thread Ressurection:

I have found the thought of using a Vienna base as very intriguing. In fact, Im considering an pseudo-IPA using Vienna and Rye. Code name vIPAr.

77.4% Weyermann Vienna 12.75 lbs
15.2% Weyermann Rye 2.50 lbs
07.6% Weyermann CaraHell 1.25 lbs

1 Oz Magnum 60 Mins - 41.6 IBU
1 Oz Chinook 20 Mins - 18.9 IBU
1 Oz Cluster 10 Mins - 7.4 IBU
1 Oz Cascade 2 Mins - 1.5 IBU
1 Oz Cluster dry-hop
1Oz Cascase dry-hop

That looks awesome... I'm interested in how that turns out.

I just made a 1.050 Vienna SMASH with Centennial hops. It's good, but it's fairly 1-dimensional...it tastes like Vienna malt.

My dubbel with vienna as base malt won 3rd place in national competition just recently. :)

I do a Vienna / Amarillo sMaSh regularly its on of my favorites.
11 lbs Vienna
1oz FWH
1oz 20 min
1oz 10 min
1oz 5 min
1 oz dry hop in keg
