I am bottling a Brett beer and plan on using wine yeast to carb it. Is there a sort of fallback dry yeast when it comes to wines? i.e. with beer the wonder yeast is US-05. Anyway, if not, I was planning on using a dry packet of Chardonnay or Champagne yeast. Any recs for these? Thanks!
