In specific, I have a saison that keeps going and going... It stuck in primary, so moved to the warmest place in my house ( low 80s) for a total of 30 days. After that the gravity had dropped to desired range so I racked it, now it's in my basement at 60-65 F and has started to bubble slowly again, 19 days after racking! I'm not worried, only little confused and planning on not brewing anymore saisons till the summer.

Any ideas or comments?

1.055 OG racked at 1.011 wyeast 3724

3724 will take it much lower than 1.011. It's also a notoriously slow finisher. If you want. Quicker saison go with 3711. Although the flavor won't be as complex.
 
If it continues to remain at a high gravity, you could always pitch some 3711 to finish it up.
