My favorite brews all come with an aerating device in them (Guinness, Boddington's) if not on tap. I see some clones to these recipes, but will it really have the creaminess that these brews have if I bottle (no keg yet)? What ingredient (if not the widgets) gives these beers that creamy taste? I have made some good bitter brews, but am trying to get that pub-type taste next.
 
Yeah it is the nitro. While it really doesn't affect the flavor, it may influence your perception of creaminess. If you want to get a brew with a good mouthfeel, a good thing to shoot for would be an Oatmeal Stout. In the future, I will have a nitro system for my Stouts because I just love that effect.
