I like the flavor profile from RedStar's Premier Cuvee champagne yeast. But being a champagne yeast it is aggressive and has a high alcohol tolerance.
I'm looking for a yeast with a similar (identical would be nice) flavor profile that will die off around 10% or a little less.
Any suggestions?
