I have a harvested (Washed) jar of Wyeast German Ale (1007) that I washed from an Oktoberfest I made last fall. Whats the opinions on using it in Kolsch. I probably will no be able to ferment it much below 70 degrees. I used another jar of the washed yeast in an Alt that I made; the yeast did not impart much esters in the beer, but I was able to keep the ferment below 65 for much of it.

TIA
Dan

It'll probably resemble a Helles more than a Kolsch. It won't be a bad beer, but not truly a Kolsch.

Wyeast does recommend it as a choice for Kolsch, oddly enough.

YEAST STRAIN: 1007

A true top cropping yeast with low ester formation and a broad temperature range. Fermentation at higher temperatures may produce mild fruitiness. This powdery strain results in yeast that remains in suspension post fermentation. Beers mature rapidly, even when cold fermentation is used. Low or no detectable diacetyl.
