I got a kit for Christmas to make a cab sav and I got everything into the fermentor on Monday the 12th. My instructions say to transfer my wine to a carboy when the gravity is 1.010. This should be after about 5-7 days. It turns out I have to leave town unexpectedly this Friday the 16th and I may not be home until the 23rd - the 25th. When I transfer the wine to the carboy it should stay there until the gravity reaches 0.996 or less which is about 10 days.

My question then is, should I transfer the wine into the carboy on friday before I go. The gravity will probably not be 1.010, but it may be somewhat close? Or should I wait until I get back and then transfer it into the carboy for what would probably be only a day or two before I add the rest of my ingrediant bags?
