I have a quick question. what is the difference between pasteurized and non pasteurized juice? Is uv filtered non pasteurized juice ok to use? and what additives/preservatives are okay if any at all?
 
If you use unpasteurized juice, you will want to use campden tablets to kill off bacteria and wild yeast before pitching your yeast (unless you want to use the wild yeast to ferment your cider). Generally, whether pasteurized or not, you want to use cider with no preservatives.
 
You can ferment anything as long as it doesn't have preservatives. But ascorbic acid/vitamin C as a preservative is fine.
