OK, so I brewed up a simple extract wheat beer about 2 months ago and bottled it exactly 4 weeks ago. It still has a very low carbonation level. It's been stored in my basement for the 4 weeks at roughly 55 F.

So...did I put the yeast to sleep? Do I just need to give it more time? How long would you wait at that temperature until you figure it's gone as far as it's going to go?

Gently roll them and warm them up. 70 deg. I think you made them sleepy.

Check them again in a week or 2.

3 weeks @ 70, 3 weeks @ 70, 3 weeks @ 70

Warm them up....Bring them upstairs and check them in a week..they may be done...or will still need three weeks...but at 55 the yeasties are barely awake.

Yeah that's what I figured. Sometimes you just need that little affirmation you know. I should have paid more attention to the temperature in the basement before I stuck them down there. New house and all... oh well.
