Brewed this from the Extreme Brewing book. It says 10 days from brew day to bottling day. OG= 1.072. Took the gravity after 10 days and was only 1.034, need to get it down to 1.012. Have a small thermometer next to the carboy and have kept temps at 76-78F. Any idea how much longer this gravity drop should take? Used Wyeast 3724 by the way.
 
I brewed this same recipe as well. It takes at least 21 days in the primary and the higher the temps the better. I went 28 days and finally got it down below 1.010. Currently sitting in the secondary waiting to bottle. Crank up you temp above 80, put a blanket on the carboy and let the yeast do its thing.
