Stopping Fermentation

Is there a way to stop fermentation like say I wanted my beer to be slightly sweeter but didn't want to add and lactose or any other non-fermenting sugar. Is there something I can add to stop the fermentation or is there a means to do this with temp control?
 
campden tablets will kill the yeast and stop your fermentation. However, this is a problem if you plan to bottle it, because there is nothing there to give carbonation in the bottles. If you keg and force carbonate, you're fine.

I haven't had much luck with any method other than campden, but I've only tried to stop cider ferments where I didn't care about carbonation.

That's the main ingredient in campden tablets old boy.
