Its been awhile since I have brewed... almost 1.5 years. I am planning on doing AHS honey kolsch mini-mash this weekend. I am going to use WLP029. After the normal brewing process, I am a bit hazy remembering all the details and would love some help.
I am going to ferment at 66. I plan on going for 2 weeks in the primary then raise it a couple degrees to make sure it is fully done. After that I am planning on cold crashing which I have never done before. Do I need to ease it in at all, or just move it down to 35ish at once? How long should I leave it at the colder temperature? Also I am planning on bottle carbonating and was wondering if there will be enough yeast left to produce a good carbonated batch. I have had a bit of trouble before with carbonation and worry this will make it even harder.
