I've been hearing that you should drink hefeweizens when they are young, but my question is what happens if I leave them in the bottle for another month or so? The reason I ask is there is a competition I want to enter over 4th of July weekend. I bottled this batch on 5/23 so it will be over a month in the bottle by the time they taste it. Any reason it can't sit this long? (assuming good sanitation etc)
Pretty simple recipe:
6lbs muntons wheat dme (55/45 wh/b)
1 lb Breiss 2-row pale
2/3lb flaked wheat (mashed w/ base)
2oz argentine cascade (1oz bittering, 1/2 oz flavor, 1/2oz aroma)
wl300 hefeweizen yeast
It tastes pretty good imo, very close to style (i bought a bottle of paulaner when I bottled it to compare, Im a nerd like that)
