I am thinking of making a raspberry wheat ale, but wondered about using fresh fruit vs extract and when to add it. I heard that adding fresh fruit can dry the beer out...anyone have any advice/recipes?
 
I made one last year. Turned out well. Let your wheat ferment for two weeks and then rack onto puréed raspberry in a secondary for an additional week or two. You can get it canned at most homebrewer or wine shops. You can use real raspberries but you need to look into how to pasteurize properly. I have heard bad things about extract.
