First attempt at my own IIPA recipe...suggestions welcome. Intending it to be a red IIPA, obviously hefty on bitterness. Wondering if the grain/LME schedule would be enough to balance out the IBU's?

It sounds like a good recipe to me. A few suggestions. First, I personally wouldn't consider it a double IPA. I'm not sure if there are any strict guidelines, but my opinion is that a double IPA has an ABV >8%.
Second, 84 IBU's is pretty high for only a 1.063 O.G./ 6.3% ABV beer. I would either move one ounce of Chinook to a late hop addition or come up on the O.G. to get you around 7% - 7.5%.

Again, these are just suggestions I would make to fit my taste. Good luck with your Brew.
 
Thanks for the tips! Re-worked it so it will be a bit heftier ABV-wise, and I also broke up the Chinook boil times to reduce the risk of IBU overdose (!!):

I dont know, I've seen/heard of double IPAs in the 6-7% range. I thought imperial IPAs were the bigger ones, which are not, double IPAs. But some consider double IPAs = Imperial IPAs.

But to answer your question, I'll let you know how the recipe is after you send me a bottle! Cheers!
 
Ah-so. As far as I was concerned (correct me if I'm wrong), IIPA is just the same as a standard IPA but with a larger hop schedule & ABV to boot. Only called it an IIPA after what Brew Smith was telling me, since everything but the IBU's were marked as being on target of what the programs' standard IIPA should be (the IBU's were actually over the limit!).

You're on the lower limits of a IIPA, and it's kinda nitpicking, but IMO that's too much crystal to call it a IIPA. maybe an Imperial Red would be closer, but its homebrewing so you don't need to be strict.

As for the recipe, I'd move half the 30min add back to 60mins and the other half somewhere at the end of boil or dry hop. 30min adds are kind of a waste since they're underutilzed and add pretty much nothing to flavor/aroma.

I made a big IPA not long ago. It wasn't imperial, but it was 84 IBU's and only had a starting gravity of 1.062. I think you'll be fine, who really cares what you call it, it's going to taste good for sure:D
 
First, IIPA is officially Imperial IPA and Double IPA is essentially just "slang" but is still accepted in the BJCP guidelines as a reference to the style, but currently there are only three official styles of the beer, English IPA, American IPA and Imperial IPA.

Now in my opinion you are on the low end of this style. OG should be around 1.070-1.090, IBU's: 60-120 and ABV:7.5-10% but in all honesty, make something that you think will taste good! I would increase the alcohol to the 9% range, but that is just because that is what I brew my IIPA at, and it is a happy romance of over-the-top type of hopping with a good bite.

I agree that the "Double" just refers to the 2 I's

A "Dubbel" is something altogether different.
