Scoby - what do I do with old?

So I have just started brewing booch, and I have tried numerous ways - all seemingly with the same results. Maybe this should be a poll!

So:

I have pitched the old scoby, put in my starter with the new tea and a new one forms.

I have peeled the baby scoby off and pitched the mother scoby

I have done nothing and just let the baby scoby layer up an peel off on its own

Is there an advantage to one approach or the other?
 
Definitely peel them apart. It takes up more space in the fermenter, which means less finished booch.

I peel them off, put the bottom layer in a "hotel," and use the top layer for the next batch.

When you say "pitch," you mean throw away? In brewing, "pitch" means adding yeast to ferment. So it's a little confusing when you say you pitched it - they mean the opposite in this case :)
