I have a 6 month old Brett B Belgian Saison that I'd like to Bottle. I am concerned about having bottle bombs for obvious reasons.

And advice for me?

Should I shoot on the low side of carbonation? 2.0? 2.3?
Standard bottles ok?
 
Is it stable? Have you checked the gravity?

If it is stable just bottle as normal.

I agree with this statement. I bottled a Brett C beer a few months ago and was worried about bottle bombs so I carbed at 2 vol. I can honestly say that the beer has been a bit flat for my liking.
