i'm looking for any and all barley wine recipes, i'm a huge fan of barley wines and believe it or not, i'd drink it all the time if i could. i know it has to age a good while before its ready and i don't mind, i'll just make a batch a month so i always have a supply once it has aged. any help with this would be great! thank you!!

extract recipes would be preferred
 
Old Bog Water: half mash

5 lbs pale malt
1 lb Crystal 80L
4 oz Rye malt
2 oz Peat smoked barley (used 1/2 lb in 2003 batch. Bad idea)

Single infusion mash @152F 2 gallons pH 5.2 60 minutes
Batch sparge at 165F two or three times to get 6 gallons

6 lbs Pale LME
2 lbs brown sugar

2 oz Columbus pellets &
1 oz Cascade 15 minutes after Hot Break
1 oz East Kent Golding after 45 minutes
Additional 30 minutes boil

WLP051 California V
(re-aireate ten minutes every hour for six hours)

Rest in keg with dry champaigne yeast

Stash until late 2006

You could probably substitute 11 lbs of amber extract for the pale male, crystal and LME.

Here's an easy one:

Barleywine
2 lbs. Crystal Malt 40°L
8 oz. Belgian Caramunich
8 oz. Rye Flaked
15 lbs. Light DME
5 lbs. Honey
4 oz. Cascade (Whole, 5.50 %AA) boiled 60 minutes
2 oz. Willamette (Whole, 5.00 %AA) boiled 15 minutes
2 oz. Willamette (Whole, 5.00 %AA) boiled 1 minute
1 vial White Labs WLP004 Irish Stout

OG: 1.185
FG: 1.020 - 1.030
SRM: ~20
IBU: 44
ABV: 20.8%

Just did one last night. Check out thread a few down the list. It came out a dark brown color. You could substitute something lighter for the Crystal 120. Gravity could be higher with a more efficient sparge. I ran out of room. OG could be closer to 1.100. Also you can sub 3 lb of light DME for 5 lb. of the Pale Malt.
3 Gallons - All Grain

11 lb. Pale Ale Malt
0.75 lb. Crystal 60
0.25 lb. Crystal 120
2 oz. Chocolate Malt

1 oz Chinook (12%) 60 min
0.5 oz. Cascade (6%) 15 min
0.375 oz. Centennial (9.9%) 15 min
0.5 oz. Cascade 5 min
0.375 oz. Centennnial 5min
0.25 oz. each, Chinook, Cascade, Centennial Dry Hop

Yeast: White Labs CA Ale WLP 001 yeast cake from previous 5 gal. pale ale batch.

OG: 1.090
IBU: 98
SRM: 20
