This cider is awesome which because i didnt do any boiling or add campden so it may have variables and I may have just got lucky but i wanted to just wing it.

Champagne yeast
Big 1/2 gallon starter you want to overpower anything your throwing on top of
15 pound pears fresh off tree
peel and core
left prolly 7 pound usable
put 7 lb sugar in bucket with warm water put on lid and shook to dissolve as best a could
Threw in two heaping tablespoons of pumpkin spice
added pear slices
Pitched yeast
Ferment 7 days and now im trying a big ol glass of it every couple days until i get the sweetness down to what i think is optimum
Finally i will cold crash the bucket and transfer to fresh bucket and serve to freinds
good Perry is amazingly simple to make
