i know there is no standard but what is the most used/useful wine yeast to have on hand?
been to the same place 2 times and asked the same question to 2 different people one gave me d-47 and the other gave me premier couvee.
would like to keep a stock on hand. looking for what to stock up on, mainly be making fruit wines..

There is no single best wine yeast but I generally keep all of the following in my fridge. I really couldn't choose a single best since reds and whites, at a minimum, require different yeasts. I can pick my absolute favorite "go to" yeasts, though.

71B-1122
EC-1118
**K1V-1116
**D-47
RC-212

PREMIER CUVEE
**COTE de BLANC
PASTEUR CHAMPAGNE
**PASTEUR RED
MONTRACHET

i figured as much that reds and whites would do best with different strains.
just trying to get an idea of what others use as their go to's..

summersolstice what are the ** for?
