I was trying to make a SNPA clone the other day and I intended on splitting the malt up for early and late additions to help boost the ABV. The problem is that I got interrupted during the boil and forgot to add the malt until there was 15 minutes left in the boil. Obviously my OG ended up being much higher than what I expected it to be (1.065 vs 1.056). At first I just thought great my ABV will be MUCH higher but after three days in the fermentor the bubbling has nearly quit and the liquid is very cloudy. Did I ruin the beer? I only used one package of yeast and I am worried that I should have used two packages of yeast to make this work. What are my options? I am worried that I will need to throw this out because if will not fully ferment.
