Anyone ever try to Clone this American Wheat Ale? This year's batch is very goodah, and I am thinking that a Home Brewed version would be even better.

Thanks Filter. Using your recipe as a Base, here's what I came up with using Beer Smith...

4.80 lbs. American 2 Row

4.80 lbs Dark Wheat

1.00 lb Flaked Wheat

.50 lb Cara Pils

1.05 ounces Hallertau (60 minutes)

1.00 ounce Saaz (5 mins)

1.00 ounce Lemon Zest (Boil 5 mins)

3 grams seeds of paradise (Boil 5 mins)

Wyeast 3944 Belgian Witbier


Now, my only questions would be just what the heck is Lemon Zest and Seeds of Paradise and
where might I aquire them?:confused:

Lemon zest is just the grated outside of a lemon, grains of paradise is available at most LHBS.
 
lemon zest is just from grating the yellow off of a lemon, i'm not sure about the seeds of paradise. i have heard of it before tho

EDIT: not fast enough on the draw...
 
Here's the recipe I use...I've never done a sisde by side comparison, but it's really close IMHO...

6.00 lbs. Wheat Malt
2.00 lbs. Pale Malt(2-row)
1.00 oz. Tettnanger Tettnang 60 min.
1.00 oz. Tettnanger Tettnang 10 min.
1 oz lemon zest for 5 min in boil
1/2 tsp Grains of paradies for 5 min in boil


I got my Grains of Paradise (sometimes called Seeds of Paradise) from here


Edit: As I'm now thinking about brewing this soon and the way things are going with the hops shortage...Anyne know of a good sub for Tettnang that's widely available??
 
i stopped by my LHB store and pick up everything i need for this weekend:ban:

1/2 oz grains of paradise @ last 5 min of boil
1 oz. lemon zest @ last 5 min of boil

4 AAU Hallertau @ 45 min
2 AAU Hallertau @ end of boil

Belgian white yeast
 
Hi all, I’m new to home brew, but I do have a good bit of culinary experience. Lemon zest, as others have said is the yellow “skin” of the lemon. It is best removed with a medium (as apposed to coarse or fine) micro-plane (see here: http://www.crateandbarrel.com/family.aspx?c=746&f=2683) but a sharp cheese grater will work. Be careful, however not to get any pith (the softer, white sponger looking stuff under the yellow) because it is very bitter. All of the flavor and natural lemon oils are in the zest.

Grains of paradise can be found in specialty food stores. They have a zesty flavor reminiscent of pepper, with hints of flowers, coriander and cardamom.
 
I know this is an old thread, but I would love to brew this recipe. Does anyone knows ferm times and aging for this recipe??
 
I'm brewing an American Wheat Memorial day. Well, it will be hefe-like, I'm using Danstar Munich yeast, but no "Euro" grains (no Munich or Vienna).

Kind of considering adding some lemon zest, but I may just add a lemon slice to the glass when I feel like it.

My lovely Paulaner Hefe clone keg went dry over the weekend.

I've been thinking of brewing this up, so i've been searching old posts......One question, it seems to be a wheat beer, but on the links to AHB recipe's they don't use a wheat yeast......Any ideas why not????

I would like the answer to this question as well, I am getting ready to brew something similar to this and have the same concern.

I think you could use an American Wheat like 1010. Its got a very low ester. It also got a good temp range for this time of year.

It has a very neutral taste. BMC-like. Unlike typical wheat yeast strains, this one would please the BMC masses. I think that is what SA was after here. It has no off flavors or what one would consider to be funky or Belgian-like, assuming you discount the spices. No banana, no clove, no phenolics.

thanks for the good looking recipe! I just put this one together today, with wishful thoughts that by march when it's ready the weather outside will be deserving of a crisp refreshing summer ale.

I'll repost with updates on how it come out

sorry to revive a dead thread, but this stuff came out awesome. Did a blind side by side against this year's sam summer and both guys I had tasting picked the homebrew version as their favorite. I'd been lagering it for five weeks at 33F and the clarity was awesome (better than the commercial version) and the lemon flavors stood out more as well. Sadly, I'm down to the last sixer of it :(
