What's your best mash schedule?

I have only done the 1-step mash so far. However, I was wondering if there is another (single) step that any of you have added that really improved your beer. I would also like to hear the flip side: have you added a step and noticed no difference?

I've done many step mashes, both as infusion and decoction, and I'd be hard pressed to say that either made a noticeable difference in the beer. 99% of the time I do a single infusion, single temp mash.
