New to the forum and had a question about my first wine. I just bottles it yesterday. Looked clear and didn't see any issues. Well... I went to put all my beer and wine making gear away and found a package of Potassium Sorbate.... Did I just ruin the entire thing? ImageUploadedByHome Brew1392686595.250436.jpg

No. I never use sorbate in my kit wines. The only time you need sorbate is if you are sweetening the wine after fermentation. Kits always include it, "just in case" I suppose, but I never use it.

Sorbate prevents yeast from reproducing, it does not kill it. Potassium metabisulfite stuns yeast into dormancy. If you add both, you usually stop yeast from eating more sugar and making alcohol, if the wine has gone dry. This lets you backsweeten. It is not a way of stopping an active fermentation.
