need help with Hennepin Clone

I am going to be doing a Hennepin Clone this weekend...

The recipe is as follows:

2 lbs candi sugar (I heard 2 lbs of cane sugar was fine so that is what I am using)
9 lbs Pils malt
3 lbs pale malt

1.5 oz styrian goldings for 60 min
0.5 oz Saaz for 15 min

1 oz bitter orange peel at 15 min
1 oz dried ginger at 15 min

My question is in regards to the last two ingredients. I got them both from the herbs and spices section at the grocery store. The ginger was dried ground ginger...do I put 2 tbs of this in (About 1 oz). Does this sound like too much? Same question for the orange peel...

I really like this beer and don't want to over spice it. Please help!
