We have John Bull Pilsner syrup extract and 2 pounds extra light DME. The recipe calls for brewing salts, which we do not have. Can the batch go without? Or are these necessary? What do they do?

Not necessary. They subtly improve the quality of the beer, but you'll be fine without them. The purpose is to amend the water to be similar to the water from the brewing region in question. But, oddly enough, Pils water is very soft, so I dunno why they call for them. Usually you use them when trying to recreate Burton-On-Trent water, etc.
