What would be the reason for not fermenting in an igloo cooler?

More expensive than a bucket. The insulation would hold in the heat produced by fermentation and probably cause the temperature to run up to undesirable levels.

other than putting an airlock on it, only disadvantage I see is that it would be too easy to open it up to check on progress with an increased chance of letting bad things in

the cost & heat thing, too

I work in sports medicine, have lots of experience with these type of coolers. The plastic liner on the inside of the coolers is crap. Very thin, and I believe tends to absorb flavors somewhat easily. We have left gatorade in coolers for weeks (by mistake) and after cleaning really well we can always detect that gatorade was left in there too long. I would worry that the liner would absorb beer flavors over time.
