When I make my Pumpkin Ales...I cut the pumpkin up in 1 inch squares, coat them with brown sugar and bake at 350 for an hour to an hour and a half....additionally I carbonate my kegs/bottles with brown sugar as well, it really complements the beer.
Just my 2 cents...happy brewing!

I like the idea of the brown sugar. Anyone else have any thoughts on this recipe?

Mash 8 #, i did 3 # in a <2 gal batch and was about just right. You can go heavier on the pumpkin but not as much for the spice wich is the main player in a pumpkin really.Im not shure how much an oz is in tbls. but you may not want more than 3 tblsp of spice total. I think you may have a crazy amout of spice there. 2.4 oz of spice? How many tablespoons is that?
