can you add any plant matter for flavor?

I am not ready to make my own creations yet ,,but I always thought it would be cool to make a beer flavored with things found in my back yard such as wild berries maple leaves and acorns . I know it sounds CRAZY but I just have to know!
 
i've heard of oak leaves being used (i think for some kind of wine?) also spruce tips in beer. you can pretty much use any herb thats edible.
 
Acorns are edible,as the native Americans made meal out of them to cook with. But they have to be soaked in cold water a few times to get the bitter tannins out of them 1st. Then dried or roasted. They used to spread them out in the sun to dry.
But there is one species of oak out west that are naturally low in tannins,& don't need to be soaked. There are videos on youtube all about using acorns & such.
