All Grain OG gravity way too low...WTF?

I THINK IS SEE WHERE I MESSED UP. AFTER I DRAINED THE MASH, I EMPTIED ABOUT 3.5 GAL. I ADDED 3.5 GAL. OF WATER INTO THE MASH FOR 15 MINS AND COLLECTED ABOUT 6 GAL. AND BOILED FOR AN HOUR.COLLECTED ABOUT 5 GAL OF WORT. COOLED IT DOWN TO 68 AND CHECKED THE GRAVITY AT 1.072.

I DONT THINK I WAS SUPPOSED TO ADD ANOTHER 3.5 gal. A SECOND TIME, WAS I? IT THREW ME OF WHEN I SAW BATCH SPARGE W/ 2 STEPS

ALSO, THE WORT TASTED LIKE CRAP. BURNED AND CHALKY. I JUST PITCHED IN THE YEAST ANYWAY. ANYONE SEE WHAT I DID WRONG?
 
According to what you have written your volumes are all way off or just not measured properly.

If you mash in 6.95G for 85 minutes and assume .85G absorption you should drain 6.10G, then add 3.57G and sparge with no additional absorption your pre boil volume should have been 9.67G

Assuming 1G boil off and .35G shrinkage to cooling your post boil, chilled volume should be 8.32G

Based on these numbers your wort was over diluted and thus the much lower OG. Are you using a calibrated brew stick or vessels to read your actual volumes?

It appears from the grain bill and process that if the actual volumes were used the OG should have been there for you.

You say you only got 5G of wort??? can't be based on your numbers. Even if you absorbed slightly more and boiled off a little more I really don't think it would have amounted to an additional 3.3G of loss.
 
I'll also add that you have your mash efficiency for that recipe listed as 90.2%, that's (almost) unrealistically high so if you're basing the numbers off that you'll probably be off. 75% is a more reasonable number.
 
There's a problem with your equipment setup in BeerSmith, it is figuring a 4 gallon batch size, 3.25 bottling volume.

What are you making? 19# of grain for a 4 gallon batch is a ton.

My rule of thumb is 1.4qts per pound and batch sparge with the same amount of water as my batch size spit into 2 sparges.
 
i was trying to go for a super strong RIS above the 13% range. i harvested dregs from the Bruery's white oak and pitched it into the wort anyways and put a sterilized foil and within 24 hrs, it made a mess,lol. good thing i put the carboy in the garage.

im gonna have to do some adjustments
