So the farmer who's raspberries my bees pollinate throws away huge quantities of over ripe raspberries every day during the season. What with me being of Scottish extraction and all I didn't want them to go to waste, so I took a bunch, mixed it with honey from that very same farm and fermented it. Drinkable in 6 weeks (believe it or not) it really tastes like raspberries and is about 10-12% alcohol, so it's like a lighter Zin for comparison. And it's real purdy :)

Do you have a recipe for your mead?
 
I love raspberries, but find that just raspberry alone, often makes for an over powering flavour, so I've taken to swapping some of the water for apple juice.

Plus I make like a coulis by simmering some raspberries and adding some honey or sugar - it's excellent for topping off to the desired level of "raspberriness"....
