How is this hop schedule? Too crazy?

Take a look at the recipe below, and tell me what I can do to adjust the sweetness from the 33% of caramel malts. The grains are already mixed. Will 84 IBU's be enough to balance?


10 lbs. American 2-row
4 lbs. American Caramel 10°L
1 lb. American Caramel 40°L

.75oz. Galena (10.1 %AA) 60min
.75oz. Chinook (10.7 %AA) 20min
1oz. Pride of Ringwood (11 %AA) 10min
1oz. Simcoe (11.9 %AA) 3min
1oz. Czech Saaz (2.6 %AA) 1min

1oz. Crystal Whole (4.6 %AA) Flameout
2oz. Crystal Whole (4.6 %AA) Secondary 5 days
1oz. E Kent Goldings (5.5 %AA) Secondary (after Crystal) 7 days
 
The IBU's are going to be really high, run it through a on line beer calculator to see how many you will end up with. If you think you can handle it go for it
 
I've haven't tried the 'Pride of Ringwood' yet, but it looks to be the makings of a really hoppy IPA! I think it looks alright, bit of a bite to it, but then again I don't have brewsmith or anything to play around with the numbers... Hope someone chimes in and it turns out to be a great brew!
 
My only concern to add is that the aroma from saaz and at least the EKG are going to be overwhelmed by the Chinook and Simcoe.
 
5 pounds of crystal malt? Seriously?

Are you OK with this thing finishing around 1.035 - 1.040 ?

I agree that that is waaaaaaaaaaaaaaay to much crystal malt (15-20% max usually)

I also agree that the flavors of the Saaz and EKG's will be lost and I would save those for another day
 
Way too much crystal. If was me, I'd add another 10-20 pounds of base malt, then use it for 3 batches instead of one. You could do more with it, too, by adding some other specialty grains. No way would I make a beer with 5 pounds of crystal.

so i took your advice and got 10# moer of 2-row. i will cut 5# of that into the crystal mix and save the rest for another batch.

any more thoughts on the hop schedule?

I would go ahead and put the entire 10 pounds of 2 row into the mix. That would still leave you with 20% crystal malt, which is still more than I've ever used in a recipe.

I don't really see anything wrong with your hop schedule, but then again I'm not sure want you are going for. I agree with the other poster that said the Chinook will overwhelm some of the other hops....if it were me I would use a different hop for your 20 min addition, but again I'm not sure what you want out of this and we all have different tastes.

i meant to say that i will take 5# OUT of the crystal mix and add in 5# of the 2-row. that will cut down the crystal by 50%, leaving 16% roughly.
 
this saturday. and i've adjusted the hop schedule once again.

now:
.5 galena 60min
.25 chinook 60min
.25 simcoe 60min

TOTAL- 1oz. at avg 10.7 %AA for 60min

then 3 total oz. broken into (20) .15oz additions every minute for the last 20 minutes

1oz. galena
.75oz. chinook
.75oz. simcoe
.5oz. pride of ringwood

hard to calculate ibu's, but i may try to later tonight...
