Improve This Recipe Please

I found the Fair Dinkum Sparkling Aussie Ale recipe in the Papazian book. I want to make it, but I don't want to make a pure extract beer (nothing against those). Any other ideas on what I could do to add to this recipe to improve it?

Fair Dinkum Sparkling Aussie Ale Ingredients:

3 3/4 pounds Coopers Reale Ale hopped malt extract
3 3/4 pounds Coopers light malt extract
Amarillo hops for aroma
Ale Yeast
Corn Sugar for bottling.

I'm not sure I totally understand what you are asking, but...

My favorite beer is a german altbier which is a fairly malty beer. One time I added the hops in all at the beginning of the boil, when you are supposed to add them in stages. When I added them all at the beginning it made a great malty beer with a hop flavor like an IPA.
 
ditch the hopped extract and use light lme or dme and sub pellet hops for a 60 min boil?
