Yeast: WLP060 American Ale cake from previous blond ale batch; boosted with WLP099 High Grav and champagne yeast when ferment got stuck

I haven't tried this one yet; if you want to give it some more time in the bottle, that's fine with me.

I panicked a little when the SG went from 1.108 to 1.030 in two days...then sat there for two weeks. I could tell the fermentation wasn;t done, because you could really taste the unfermented honey. So I tossed in the WLP099 (which I had planned all along) and the champagne yeast (I have no idea why), and the ferment started again. And kept going...and going...all the way to 1.008.

At bottling, it didn't taste TOO dry, or overly alcoholic, but we'll see. I guess it's not really a BW anymore; maybe more of a IIPA.
 
If Bell's Two Hearted were a Brown, it might be something like this.

A not-so-caramelly version of Cheesefood's famous recipe. I was leery of the vanilla, so I made a small batch (2.5 gal) and only used 1/4 the recommended amount of vanilla and lactose.

Cracked my first beerswap beer tonight, the brown ale. I tried to give the best, detailed,helpful review I could.

-Very slight hiss on opening, poured vigorously revealing a nice 1/2" head just off white. The beer was darker than I was expecting, looking at the guidelines for brown ales it is certainly within the "light to very dark brown" appearance - definitely dark brown with a little red when held up to the light. The head faded after a few minutes, but some head remained till the end.

-Aroma is faint, slightly malty but mainly slightly roasty/toasted aroma. Very faint hop aroma - hard to detect.

-Taste when cold is very clean with a little maltiness but mainly roasted and toasted flavors. Very clean/dry finish. As it was warming up I thought I tasted a little astringency. As it warmed up the malt came through more as well as some hop flavor. I can't believe it has 50 IBU's, hop bitterness is very balanced - the bitterness is there but it doesn't tatse that high to me. Carbonation was good and appropriate to the style. Very light mouthfeel, I'd like a bit more, but it makes the beer very easy drinking.

Overall it was a very good beer that was very well made. It is not my favorite style, but I have not had a homebrewed version of a brown ale which is why I requested it. It was definitely better than other commercial examples I've had. Based on the hop schedule/amount I would expect more bitterness and aroma, but if I didn't know the recipe I wouldn't think anything was lacking in the beer. The only flaw was the astrinency, but it was very slight, I wonder if anyone else will taste it, maybe me just trying to really analyze the beer. I think if I was just drinking it to drink it, without having to write a review, I may have not noticed it.

Finally got around to popping it just now. Nice schpppttt on the cap. Nicely carbonated, thick rocky head with some nice lace. Fruity aroma at first, but after a moment, a another sniff later and the hops come through. A little cloudy, but normal for a bottle conditioned beer. Pretty light amber/dark golden color.

At first taste, the hops hit you in the face, but mellow in the follow through.

Damn nice pale ale! Ya shoulda sent a couple more! :mug:
