My Dogfishead 60 minute has been in primary for two weeks now. With the fermentation down to almost a halt I racked to the secondary fermenter. Upon this taste i sampled me beer was not delicious. How close does the taste after primary fermentation to the final product vary?? I am hoping this beer will develop some more flavor
 
It should be MUCH MUCH better in 4 weeks.
Bitter beer can be harsh when young.

Many a brewer have not liked a beer at 2 weeks and loved it at a later date.
 
I was planning on bottling should i push this date back or will it mature the same in the bottle. I brewed on 10/01
 
I personally think it'll be better and more consistent if you bulk age it for another 2 weeks.
Up to you though. If you think it's cleared enough then do it when you want to
