What is it? How do I do it? Do I need to do it? What happens if I don't do it? I will be bottling my first batch soon,so I guess this is a good time to ask.

I didn't do it to my first mead, but I also didn't bottle it for 9 months.

I think the real questions here are, what are you bottling it in? Do you mind if it's a trace bubbly?

If you're putting it in beer bottles, any CO2 in solution isn't going to hurt anything except your feelings. If you're putting it in wine bottles and corking, you probably need to either degass or let it sit long enough to degass itself.
