Doing a Petite Saison and want to add some apricots for a nice summer brew. I'm looking at a pile of dried and fresh and wondering which to use. The dried apricots are from Turkey and have a really intense flavor but I'm worried about preservatives... I'm also worried about the amount of fruit I use. Would really appreciate some feedback !!!
 
So what I would do is brew like normal and rack it to a secondary. Bring water to about 175 and quickly blanch the apricots to kill the bacteria and stuff on them and dump all of that stuff into the secondary. You can also add it to the primary after about a week, before your beer has finished fermenting.
