I went to bottle my Octoberfest tonight and decided to take a sip. It had taste but seemed more watered down than it should have been. I'm a new brewer and this is my third batch. Is this normal? I went ahead and primed/bottled anyway.

All beers take on a significantly different flavor/perception after conditioning and carbonating. I wouldn't loose any sleep over it. Make a note of it and if the final beer isn't what you were hoping for it's just one thing to consider when you troubleshoot.
