I recently purchased a kit to do a schwarzbier. I am excited because this is my favorite style. This is my 5th batch over the past year but it is my first lager. I have a couple of questions. I do not have a lagering fridge/freezer setup yet. Can it be done without it? I am using saflager s-23 yeast. I have a half insulated garage that gets pretty cold. Will this suffice or do i need more specific temperatures. Can it ferment closer to room temperature and then be lagered in the cold? Any help would be appreciated. Thanks

You really need a fridge/freezer and temp control. With lagers especially it is crucial to hold the temp steady around 48-52F .

I did a Schwartzbier and fermented to warm and it produced hot alcohol flavors and wasn't that great.
