I still have a few days left in my primary fermentation before racking it into the secondary. What I am wondering is how long can I let it sit over the PB2 and cocoa nibs to continue the infusion of flavors, before I risk developing off flavors. I'm already planning a tertiary fermentation for further conditioning before bottling. Thanks everyone!
 
I've been researching this recipe and it doesn't seem you'll get any off flavors from keeping it on the pb. My plan is to brew now and let it sit for a few months to have it ready for this time next year.

The concern I have is does the pb or the cocoa nibs need to be sanitized in any way?
