Two quick questions:

1 - How long can the Apfelwein sit in primary? Several threads have said that it's better after 2-3 months. Can it sit that long in primary, or do I need to move it to secondary or bottles after a month or so.

2 - If I try a different yeast (Wyeast 3068 was recommended in one thread), do I need to use a larger fermenter/blowoff than the Montrachet? Will this yeast change the time I can leave it in primary?

from what I hear at least two months in primary and another two in bottles. No blow off tube necessary (no krauzen). As far as yeast affecting the fermentation time; I doubt it but not sure

I've left Apfelwein in primary for 4 months with absolutely no problems at all.
