I have a packet of Wyeast Brett B. I want to make a beer using just it. I've read up a fair amount on pure Brett ferms. Any suggestions of what to make? I have lots of Dingeman's 2row, pils, and Briess 2-row, and a lot of specialty malts. Also, I will probably want to reuse the yeast cake for another all brett beer and/or a Sacc + Brett beer. Any problems going from all brett to brett + Sacc? I'm just thinking about how Brett behaves differently with Sacc and if it will modify enough that subsequent generations will behave oddly when joined with Sacc. Seems unlikely, but possible.

Brett + Sacc will take longer and be funkier. I did a 100% brett B saison that is only slightly funky, was done in about 6 weeks and tastes like Pineapple juice.
