Too Early for the Secondary?

Hey All,

My first real brew is alive and kicking! It has been in the primary for 1 week now (tomorrow) but still has a big layer of krausen (sp?) at the top of the Ale, and gas is still being sent through the airlock. The directions call for one week in the primary. Should i wait until all (or at least most) of the krausen has fallen?

IMHO, yes and a day more even.

Wait for it. Brewing is weeks of tedium interspersed with moments of stark terror. Or maybe that was the Navy?

And don't forget stretches of wanton drunkeness. Could still be the either.

Another vote for waiting.

Fermentation times are too variable to specify accurately in instructions.

I always try to complete the primary within 7 days. I succeed about 20% of the time. 60% takes two weeks, and 15% takes three weeks.

Astute readers may realize that this still leaves 5% unaccounted for (always in cold weather). I could probably leave it another week, but I have always racked to secondary even if it wasn't ready.

This has always worked for me.
