i made a batch of english bitter Extract everything went well but o noticed that when i moved the sendary fermneter the yeast in the bottom was stering around i siphon it and bottled it and noticed the yeast in the bottom like half of a quater inch.will the beer be safe to drink, would it give it a nasty taste like a sweet and sour taste at the end?

the beer will be safe to drink, and no the yeast shouldn't cause any off flavors.

You will probably have super carbonated beer if you primed with all that mixed up yeast, and expect to have a few bottle bombs. Lots of companies actually bottle their beer with yeast in the bottle, but they're normally not bottled like a regular beer bottle, most have corks in them.

anyways, your beer will be fine, just be sure to not pour the yeast from the bottle to the glass when you drink it, unless you like the taste of yeast.

Agreed. You will be fine. The sign of a good home brew is a thin film of yeast staring back at you. Just make sure to use a glass and not drink from the bottle. The constant back-and-forth of taking sips will stir the yeast into solution...not a good idea.

Yeast is not going to give him any problems with bottle bombs.

after you keep them upright in the fridge for a few days + it will help the yeast compact down as well as help the carbonation infuse with the beer

carefully pour into a glass till you notice it starting to get a little hazy and leave around 1/4-1/2" in the bottom of the bottle and you'll be fine

it is safe to drink if you get some in your glass, i think most common side effect is gnarly farts

Correct. Over carbonation would occur with too much sugar, not yeast. Your beer (and most micro brewery beers) carbonate by adding some sugar and letting the yeast that is still in solution have a little tiny fermentation. Since its capped, the co2 cannot escape, like you may have noticed with your airlock the first few days it was in primary. The co2 kinda sits up in the headspace of the bottle for a bit, then slowly is absorbed back into solution, and now you have carbonated beer.

You'll see that layer of yeast in many many many micro brews at your supermarket or corner store. Many of us actually bottle harvest yeast...ie: Buy a few Rogues and save the last inch or so of a few bottles and make a starter with it and grow it. Their house yeast (Pacman) is great and thats the only way to get it now.

As far as drinking it, as someone said, its usually best to pour into a glass and decant off the yeast. The little bump in the neck of a beer bottle was originally put there EXACTLY for that purpose. But, some beers, mostly belgians, will recommend that you pour half...swirl the bottle around to get the rest of their yeast and dump it all into your glass.

Hope this helps, and happy brewing.
