I have beer in my primary fermenting in my basement, which is cooler then anywhere else in my house, with a brew belt, to keep it at a decent temp. The last time I did this particular beer kit it 2.5 weeks to get to a decent OG to bottle w/ out the belt. In the instructions of the belt it said not to have the belt on longer then 8 days. What should I do since I assume it will take like 18 days??

Temperature control is most important during active fermentation, once fermentation slows or ends there is no problem letting the beer go to ambient.

Are you using a temperature regulator with your brew belt? I would recommend it, that's what I use and the brew belt cycles on and off as necessary to maintain the proper temperature, usually for about a weeks time and then I turn it off usually.
