I am planning to brew an IIPA later tonight, but i am a bit torn on how to use my inventory of hops. i love a very hopy aroma and flavor.

i have the following hops in my inventory, and can't just run out and add to my stash.
4 oz Chinook
2 oz Mt Hood
2 oz Amarillo
2 oz Cascade (might exchange with my brew buddy for 2 oz chinook as i should have bought him Cascade :drunk:)

here is my current plan:

Type: Extract
Date: 4/21/2009
Batch Size: 5.00 gal
Boil Size: 3.00 gal
Boil Time: 60 min

Ingredients

Amount Item Type % or IBU
11 lbs Pale Liquid Extract (8.0 SRM) Extract 84.62 %
2 lbs Caramel/Crystal Malt - 20L (20.0 SRM) Grain 15.38 %
4.00 oz Chinook [13.00 %] (60 min) Hops 83.4 IBU
2.00 oz Cascade [5.50 %] (30 min) Hops 13.6 IBU
1.00 oz Amarillo Gold [8.50 %] (15 min) Hops 6.8 IBU
1.00 oz Mt. Hood [6.00 %] (3 min) Hops 1.2 IBU
1.00 oz Amarillo Gold [8.50 %] (Dry Hop 7 days) Hops -
1 Pkgs Burton Ale (White Labs #WLP023) Yeast-Ale

Beer Profile

Est Original Gravity: 1.081 SG
Est Final Gravity: 1.021 SG
Estimated Alcohol by Vol: 7.80 %
Bitterness: 104.9
Est Color: 13.8 SRM

I am thinking that if i end up giving up my Cascade then i might add the other 1 oz of MT Hood to the boil for 30 min, or i might use the Mt Hood for the dry hop and boil 1oz of Amarillo for 30 min. Does anyone have any thoughts on how these changes might affect the final product? Am i on the right track with this, or am i crazy. Feel free to offer any ideas on how you would change things as far as use of hops and boil times..

cheers
:mug:

Looks pretty good.

There’s a difference between a tongue scrapingly bitter IIPA and an IIPA that isn’t so bitter but is loaded with hop flavor and aroma (Pliny the Elder comes to mind).

If it were my recipe, I might take some of those Chinook hops and shorten their boil time.

Maybe 2 ounces for 60 and then all other additions at 30 minutes or less at 5 minute increments.

I’d also take your dry hops up to 3-4 ounces if you can.

Just my two cents. But it does look like an inviting start.

I was curious how bitter this would be, so i think i will scale back this one more and see how it turns out.

what are your thoughts on this..

11 lbs Pale Liquid Extract (8.0 SRM) Extract 84.62 %
2 lbs Caramel/Crystal Malt - 20L (20.0 SRM) Grain 15.38 %
1.50 oz Chinook [13.00 %] (60 min) Hops 31.3 IBU
1.50 oz Chinook [13.00 %] (30 min) Hops 24.0 IBU
2.00 oz Cascade [5.50 %] (25 min) Hops 12.3 IBU
2.00 oz Amarillo Gold [8.50 %] (20 min) Hops 16.5 IBU
1.00 oz Mt. Hood [6.00 %] (10 min) Hops 3.5 IBU
1 Pkgs Burton Ale (White Labs #WLP023) Yeast-Ale

Bitterness: 87.6 IBU

and maybe a dry hop with 2oz Amarillo and 1 oz Mt Hood for 7 days.

thanks for taking the time to coach a rookie.

I am a noob but this is what I would do.. I would keep the Cascades!! I think keeping the Cascades will help with the 'flavor and aroma" that you are looking for.

1.50 oz Chinook [13.00 %] (60 min) Hops 31.3 IBU
1.50 oz Chinook [13.00 %] (20 min) Hops 24.0 IBU
1.00 oz Mt. Hood [6.00 %] (10 min) Hops 3.5 IBU
1.00 oz Cascade [5.50 %] (5 min) Hops 12.3 IBU
1.00 oz Mt. Hood [6.00 %] (0 min) Hops 3.5 IBU
1.00 oz Amarillo Gold [8.50 %] (0 min) Hops 16.5 IBU
1.00 oz Amarillo Gold [8.50 %] (Dry Hop) Hops 16.5 IBU
1.00 oz Cascade [5.50 %] (Dry Hop) Hops 12.3 IBU

Something like this anyway.. Since you say you like "flavor and aroma" using late hop additions will assist with this. Also, from my understanding everyone loves the aroma of Amarillo so you don't want to put it in at 30 as you would lose a lot of the aroma..

I have a pound of Amarillo, Magnum and Perle on the way from hopsdirect.com.. I also have Cent, Cascade and Simcoe in the freezer!! I cant wait to try something similar!!!

I hop your beer turns out great!!

Ok, so here is how she ended up. I cut the hops back a bit more,

.5oz Chinook [13.00 %] (20 min) Hops 14.1 IBU
1.0 oz Cascade [5.50 %] (20 min) Hops 3.0 IBU
1.00 oz Amarillo Gold [8.50 %] (10 min) Hops 11.0 IBU
0.75 oz Cascade [5.50 %] (10 min) Hops 2.7 IBU

Now you're talking.

Thanks for all your tips while i was working this one out. What do you think of the dry hops,

1 oz cascade
2 oz amarillo (i really like the aroma of the amarillo)

should i up the cascade in the dry hop or would that be to much? I am trying to learn exactly what to expect from dry hopping as far as added flavor and aromas.

OK so this has had about 10 days in the primary and my SG has been steady at 1.024, (OG was 1.073), for the past 3 days, which is just a touch higher than the est FG of 1.020. I am just curious if when i rack to the secondary this weekend should i pull some of the goodies from the bottom of the pirmary to let more of the yeasties do their thing and get the SG down a bit more?

the samples i have pulled for testing have been very tasty :ban:, nicely bitter and a nice hint of hops. I hope the dry hop will boost the aroma and hop flavor.

Update:

Dry hop is well under way, day 3, with 2oz cascade, and 2oz of Amarillo. Pulled a sample last night and it was awesome!! I can't wait for this one to be ready to drink in a month or so.

Update:

Bottled this one two nights ago with a FG of 1.018 after 8 days on the dry hops. Added in 4oz of corn sugar and bottled in mostly 22oz bottles. Once again the hydro sample was very tasty. I can't wait for this one to bottle condition so i can chill some down and pass 'em around.

:ban:

Well after just shy of 3 weeks in the bottle i just had to open one. Nicely bitter, good carb, a little cloudy still (but it is a bit young yet), good hop nose, slight hint of grapefruit. I am going to reserve final judgement on this one for a few more weeks, but i am happy with it so far.

OK, after bottle conditionin for a little over a month, and a week in the fridge....

THIS ONE IS A WINNER!!!!!

Beautiful hop nose, with the wonderfull smell of cascades. Nicely bitter, but not over the top for a huge IPA fan like me. Hint of grapefruit, and nice and smooth. Color is nice and clarity is like glass. I can tell this one won't last long.

Thanks to everyone that helped me work out the kinks in the recipe.
